How Long to Medium Boil an Egg

Six minutes is the medium boiled egg: white fully set, yolk thick and jammy but not runny, bright orange through the middle. It's the ramen egg, and the one most people actually want when they say soft boiled.

Fridge-cold large eggs into boiling water, timer on as they go in. Seven minutes takes the centre to fudgy; five leaves it noticeably loose.

For Ramen Eggs

Boil six minutes, cool in iced water, peel, then steep in a mix of soy sauce, mirin and water for at least four hours. The marinade colours the white and seasons it through. The egg does not cook further in the marinade, so the six minutes is what decides the yolk.
