How Long to Boil an Egg

Times below assume a large, fridge-cold egg lowered into already boiling water, with the timer started the moment it goes in. That method is more repeatable than starting in cold water, because the clock begins at a known temperature rather than whenever your pan happens to come to the boil.

TimeResult
3 minutesWhite just set, yolk completely runny — a dipping egg
4 minutesSoft boiled, yolk liquid at the centre
5 minutesJammy edges, still-loose middle
6 minutesMedium boiled — the classic jammy ramen egg
7 minutesYolk mostly set, a fudgy centre
9 minutesHard boiled, yolk set but still bright
12 minutesFirm throughout — beyond this the yolk chalks and greys

What Changes the Timing

Stop the Cooking

An egg keeps cooking in its own heat after it leaves the pan, which is where the extra minute that ruins a soft yolk comes from. Move them straight into cold or iced water. It halts the carryover, and the sharp contraction makes them markedly easier to peel.

The grey-green ring around an overcooked yolk is iron and sulfur reacting at the boundary. It's harmless, but it's a reliable sign the egg had several minutes more than it needed.
