How Long to Hard Boil Eggs

Nine minutes gives a properly hard boiled egg: yolk fully set, still deep yellow, no chalkiness. Lower fridge-cold large eggs into boiling water and start the timer as they go in.

Ten to twelve minutes is firmer and is what you want for slicing into a salad or making egg mayonnaise. Past twelve the yolk dries out and picks up the grey-green ring — iron and sulfur reacting at the surface of the yolk. Harmless, but a sign of overcooking.

Peeling Them Cleanly

Straight into cold water. Stops the carryover cooking and shrinks the egg away from the shell.
Older eggs peel better. A week or two in the fridge genuinely helps; very fresh eggs cling.
Crack and roll. Break the shell all over, then roll under light pressure before starting at the blunt end, where the air pocket is.
