Chamomile tea should be steeped for 5-7 minutes at 200-212°F (93-100°C). Chamomile is one of the most popular herbal teas for relaxation and sleep. A longer steep draws out more of the calming compounds, particularly apigenin, which binds to brain receptors that reduce anxiety and promote sleep.
Chamomile has been used as a sleep aid for centuries. Studies show that the flavonoid apigenin in chamomile binds to benzodiazepine receptors in the brain, producing a mild sedative effect. For best results, steep a strong cup (2 tea bags or 2 tablespoons loose flowers) for the full 7 minutes.
